Slow Cooker Granola

Slow Cooker Granola is the perfect winter recipe to make in the Crockpot. Granola cereal recipe ideas can be as simple as homemade granola and Greek Yoghurt!

Ingredients

Slow Cooker Granola

  • 3 tablespoon coconut oil
  • 3 cups oats
  • 1 ½ cups almonds
  • 2 cups sunflower seeds
  • cup pepitas
  • ½ cup dried cranberries
  • 2 cups pitted dates
  • 1 tablespoon cinnamon

Instructions

Slow Cooker Granola

  • Add coconut oil to Slow Cooker bowl, turn to high and let melt (or heat). Note 1
  • Add oats, almonds, sunflower seeds, pepitas, dates, cranberries to the coconut oil and use a non scratch spoon to stir to combine Note 2
  • Sprinkle cinnamon powder into bowl and stir again to combine
  • Set the temperature to low and place the lid not fully flush but skewed to the side so that air still comes into the bowl Note 3
  • Cook for 2 hours
  • After 2 hours, remove lid, turn temperature off and stir to combine
  • Serve with milk or yoghurt and top with fruits and or honey as desired.

Notes

  • Note 1 If your coconut oil is melted already, add it to the Slow Cooker bowl and still heat the oil for a couple of mins before adding the rest of the ingredients. My oil is often solid, so I add it to the bowl, turn the temperature to high, let it melt/heat and then start adding the ingredients. This allows the full surface of the bowl to have a thin layer of coconut oil so the flavour of the granola is consistent as well (as opposed to adding it all at the same time and having the oil only be mixed into parts of the granola mix). 
  • Note 2 When Slow Cooking I use with a wooden spoon or a silicon spoon to avoid scratching the surfaces of the Slow Cooker bowl. 
  • Note 3 If the lid is fully 'on' the Slow Cooker properly then the environment will be too moist to get the dryness we need when cooking granola. Skewing the lid allows us to get this dryness as it is not enclosed to the same degree.
