Mini Quiches
Mini Quiches are quick and easy! Here are 12 flavour combinations to try with simple, easy ingredients and bread for the base.

- 6 slices white bread Note 1
- 1 egg free range
- ¼ cup cream
- ¼ cup tasty cheese Note 2
- 1 teaspoon salt
- 1 tsp pepper
Optional filling ingredients
- 80 grams diced ham
- 6 cherry tomatoes
- 12 baby spinach leaves
- 100 grams feta
- 1 tablespoon tasty cheese
Preheat your oven to 180°C / 350-375°F / Gas Mark 4-5
Cut the crusts of your slices of bread
Use a rolling pin to flatten each slice
Use a cookie cutter to make the quiche crusts, 2 crusts per slice of bread Note 3
Lay the buttered side of bread into your patty pan cups and press to shape the quiche crusts
Spoon the egg mix into each quiche crust (repeat to fill all 12)
Fill your quiches by adding the toppings onto the egg mix (repeat to fill all 12)
Cook for 10 mins or until bread is toasted and a light golden brown colour
- Note 1 you can use white, wholemeal or multigrain bread.
- Note 2 you can use any type of grated cheese, ie tasty, mozarella, light. These all work well.
- Note 3 I like to get 2 crusts out of each slice of bread. If you start with the cutter right in the corner of the bread and do 1, you will be able to start in the other corner and do the 2nd crust.
- Note 4 I have based the nutritional information off the 12 different quiche flavours I have used in the recipe and photos. The kcal is per individual quiche (ie one mini quiche)
