Quinoa Stir Fry

Equipment

  • 1 Fry pan or wok

Ingredients

  • 1 tablespoon peanut oil Note 1
  • 8 French onion shallots roots and tips trimmed, sliced in halves, Note 2
  • 500 grams/1 pound pork mince (ground pork) Note 3
  • ¼ teaspoon salt Note 4
  • ½ teaspoon cracked black pepper also Note 4
  • 500 grams/1 pound quinoa Note 5
  • 150 grams/1/2 cup basil pesto Note 6
  • 2 cups frozen peas Note 7

Instructions

  • Heat pan: add peanut oil to pan, turn to medium heat and allow to come to heat. Add chopped French onion shallots and fry for 2 to 3 mins until slightly browned.
  • Pork mince: add the pork mince (ground pork) to the pan, season with salt and pepper, then cook breaking up any lumps as you go.
  • Quinoa: add cooked quinoa to the pan once the pork is cooked.
  • Peas: microwave the peas to cook them. Start with 2 mins on high, remove and stir, then microwave for 1 more minute.
  • Combine: add the peas to the pan, then dollop in the pesto sauce. Stir this to combine and allow the dish to cook through.
  • Serve and enjoy: pork, serve and enjoy!

Notes

  • Note 1 - Peanut oil: we use a little of this in the pan to cook the onion shallots and the pork. Peanut oil is my preference for Asian style recipes (and works better with non stick fry pans) than olive oil.
  • Note 2 - French onion shallots: these are great to use in this dish for both texture and taste. They are much sweeter tasting than a regular onion and once you buy them they have a good shelf life. This saves running out for 'one ingredient' as you can use something that you bought a week ago that doesn't perish quickly over time.
  • Note 3 - Pork mince: (also known as ground pork): budget friendly, freezer friendly, a nice change from beef or chicken. This versatile ingredient can be used in so many delicious ways!
  • Note 4 - Salt and pepper: a little of each of these 2 for seasoning. We add them to the pan after adding the pork mince to season it.
  • Note 5 - Quinoa: I recommend store bought pre cooked quinoa. This is one of the things that makes this recipe so easy! My preference is the quinoa only packets, but you can use the quinoa and rice version if you prefer.
  • Note 6 - Basil pesto: I recommend using the store bought dip version of this. The one that you find in the fridge. It makes such an easy, full flavoured sauce that is effortless for week nights!
  • Note 7 - Frozen peas: one of the easiest vegetables that always needs to be in every freezer! We microwave these to cook them and then add them to the pan to stir and combine.
