Malteser Rocky Road

Ingredients

  • 600 grams/21 oz milk chocolate Note 1
  • 2 cups Maltesers Note 2
  • 2 cups mini marshmallows Note 3
  • 1 cup raspberry lollies (candy) roughly chopped, Note 4
  • 1 cup peanuts roasted, unsalted

Instructions

  • Cake tin: line a square slice or cake tin with greaseproof paper (Tray dimensions 24cm x 5cm, 9 inch x 2 inches). Leave an overhang on the sides.
  • Rocky road filling: combine, maltesers, mini marshmallows, peanuts, and chopped raspberries in a large mixing bowl. Stir till consistently combined.
  • Chocolate: add chocolate melts to a large heatproof jug. Place in microwave and heat on high for 2 mins. Remove and stir to melt the rest of the chocolate.
  • Combine: pour melted chocolate over combined rocky road ingredients, stir till they are covered in chocolate.
  • Into tin: transfer wet rocky road mix to lined slice tray, then place in refrigerator to set.
  • Refrigerate: after a (minimum of 1 hour) remove rocky road from fridge and set on bench for 10 mins.
  • Portion: pull Malteser rocky road from tin, by grabbing parchment paper on either side and lifting rocky road up and out of tin. Use a sharp knife to cut into pieces.
  • To store: store the rocky road in the fridge in a sealed, airtight container for up to 3 weeks.

Notes

  • Note 1 Chocolate: you can use chocolate melts, chocolate bits or a block of cooking chocolate broken into pieces. Ensure you measure it using kitchen scales or purchase exact quantity ie 600grams/21 oz.
  • Note 2 Maltesers: I use 1 x 280 grams (approx 2 cups) share bag of Maltesers. I don't crush these, I add them in as they are from the packet. 
  • Note 3 Mini marshmallows: these mini marshmallows are perfect to use when baking as they don't need to be prepped. You can simply open the bag and throw them on into the mix. If you want to use regular size marshmallows, it is a good idea to use kitchen scissors and cut eat marshmallow in half. 
  • Note 4 Raspberry lollies: I use kitchen scissors and cut each raspberry in half (repeat for all) and then each piece in half again. So essentially each raspberry is cut into 4 pieces. They are quite a chewy lolly and I find bit size is better.
