Tim Tam Cheesecake Balls

Equipment

  • Food processor
  • Mixing bowl
  • Mini Cookie Scoop
  • Baking tray
  • Baking paper
  • Heatproof jugs

Ingredients

  • 20 375 g Tim Tam biscuits Note 1
  • 250 grams cream cheese
  • 2 cups 375 g milk chocolate
  • 1 cup 200g white chocolate

Instructions

  • Add Tim Tam Biscuits to the bowl of a food processor
  • Blitz for 10 -15 seconds to form a fine crumb
  • Add cream cheese to the biscuit crumb and blitz for 10 - 20 seconds to combine
  • Transfer cream cheese biscuit mix to mixing bowl
  • Use a cookie scoop to portion the mix out and place on a lined baking tray. Once all of the biscuit mix has been portioned, place tray in the freezer for 15 mins for balls to set
  • Add milk and white chocolate to heatproof jugs, microwave chocolate in 30 second intervals, stirring in between. Once chocolate is melted, place in slow cooker bowl to allow you to decorate at a slower pace (optional)
  • Remove Tim Tam balls from the freezer
  • Working one by one, use a fork to drop frozen Tim Tam Balls into chocolate, use a spoon to cover with chocolate, then pull fork with ball up and out of the chocolate mix. Gently shake the excess chocolate from the ball, then transfer to the lined baking tray. Note 2
  • Repeat till all balls are coated in milk chocolate
  • Use a fork to drizzle melted white chocolate over balls, then place in the fridge to set
  • Once set, transfer to a sealed air tight container and consume within 7 days

Notes

  • Note 1 This is 1 double pack of Tim Tam biscuits. The packet will be 375 grams and contain 20 biscuits. 
  • Note 2 I find the easiest way to transfer the chocolate covered balls to the tray is to push them off using a skewer at the base of them. This way they stay covered on chocolate and minimise patches on the balls.
