Cream Cheese Bacon Dip

Ingredients

  • 1 cup bacon diced, Note 1
  • 4 green onions roots and tips trimmed then thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup Greek Yoghurt
  • 250 grams/8 oz cream cheese at room temperature, chopped into cubes
  • 1 cup colby cheese grated using a handheld or box grater, Note 2

To serve:

  • potato chips Note 3

Instructions

  • Bacon: place a large frying pan on the stove top, turn the heat to high, add the diced bacon, sliced green onions, garlic powder and onion powder. Cook for 3-4 minutes and stir to combine. Once cooked, reserve 2-3 spoonfuls of the mixture.
  • Cheese and yogurt mixture: add the Greek yogurt, cream cheese and colby cheese to a large mixing bowl and stir to combine.
  • Combine: next add the cooked bacon mixture to the combined cheese and yogurt mix then stir till consistently mixed in.
  • Transfer: transfer the combined cream cheese bacon dip into a bowl and use the mixture that you reserved to top the dip.
  • To serve: place the bowl of dip into the centre of a serving plate, slide a cheese knife into the dip and then spread potato chips around the bowl.

Notes

  • Note 1: Bacon: to make this dip the quickest, easiest around town, I recommend you purchase diced bacon. It provides the texture that we want in the dip and cuts out the process of slicing our own bacon. 
  • Note 2: Cheese: the 2nd cheese adds extra savory flavor to the dip. This is as the cream cheese brings the sweet creaminess. The cheese I like to use is colby cheese. Freshly grated using a hand held or box grater. You can also use cheddar cheese, tasty cheese or your favorite freshly grated cheese. 
  • Note 3: Crackers: thin chips like shown in the photos throughout the post will break off due to the thick creamy texture of the dip. However, if you provide a cheese knife it can be scooped onto the chips 😉👍. 
  • Serving size: you will be able to fill the brown bowl you see in the photos twice with the dip (or simultaneously serve 2 bowls of it).
