Strawberry Tartlets are on Sweet Caramel Sunday!
Strawberry Tartlets, serve them like scones with freshly whipped cream and jam!
It has been hot in Sunny Queensland!! But the best thing is that means it is fruit season so we are very lucky. These Strawberry Tartlets will have your guests lining up for more.
Whip some cream, slice some strawberries, toast some pistachios and melt some chocolate!
These tartlets are smaller versions of a large 'tart'. This is a dessert you can make easily and have it as your super impressive and decadant treat!
Australian Fruits...
Every time you go to the shops in Queensland at the moment, there are fresh peaches, nectarines, plums, blueberries and raspberries! It is truly a delight to see the array of fresh fruits and the mind brainstorms ideas to use each one of them!
Strawberries have that beautiful romance about them and the combination of strawberries and cream is a match made in heaven.
When I saw fresh punnets lining the rows of the fruit store shelves, I knew I had to whip up a sweet dessert!
Be still my beating heart...
I find that I eat less chocolate when I have dark chocolate instead of milk chocolate. Either will work fine for this recipe and again you can melt your chocolate in the microwave or on the stove top.
Pistachios are so delightful with their purple colour mixed with brown tones on the outside and their bright green insides! Toasting them gives a lovely crunch to add some flavour and texture to the tartlets.

Another option for this dish is to use freshly whipped coconut cream instead of dairy cream, both taste fabulous!

It's therapy time...
This is definitely a therapeutic recipe to make! You have the fun of painting when you brush the strawberry syrup over the pastry. The joy of using beaters when you whip the cream. The bliss of melting the chocolate and the relaxation of slicing the strawberries. Toasting the pistachios will remind you that even a good thing needs a little bit of attention!
Serve these with the pastry fresh and hot from the oven. It will cool in no time and will have a delightful crunch to every bite!
I think the best way to serve these is to let your guests decorate their own tartlets. You can easily have the cream, strawberry syrup, strawberries and pistachios ready to go. The chocolate will set again quickly so it is best to melt that immediately before serving.
Strawberry Tartlets Recipe
Ingredients
Strawberry Tartlets Recipe
- 1 sheet puff pastry
- ½ cup whipping cream
- ¼ cup icing sugar
- 1 tsp vanilla essence
- ½ cup dark chocolate melts
- ¼ cup pistachios
- 1 punnet strawberries
Strawberry Syrup
- ¼ cup strawberry jam
- ¼ cup water
Instructions
Strawberry Tartlets Recipe Method
- Preheat your oven to 180 degrees F 82.2 degrees C. Line a baking tray with paper
- Lay pastry out on a choppping board. Remove backing sheet and cut into 9 pieces with a pizza roller
- Roll edges of each square of pastry inwards to create a crust around all 4 sides
- Prick pastry squares with a fork about 5 times each
- Use a pastry brush to coat the pastry squares with the strawberry syrup (not too thickly)
- Place in oven for 20 minutes, sliding the baking paper onto the oven track after 10 minutes to allow base to cook thoroughly
- Add cream, icing sugar and vanilla essence to a mixing bowl. Use electric beaters to beat till soft peaks are formed
- Melt chocolate in microwave safe container initially for 1 minute then for 30 second bursts till melted
- Serve with sliced strawberries, cream, toasted pistachios and melted chocolate
Strawberry Syrup Method
- Combine jam and water in a blender jug and blitz to combine
- Toast pistachios on lined oven tray for 4 minutes

Notes
- The chocolate will set again quickly so it is best to melt that immediately before serving.
- The recipe can be vegan (using vegan puff pastry, coconut cream and vegan chocolate)
- Don't worry if your tartlets are slightly different sizes, this is not a 'perfect' dessert. Roll with it, I say!
- This is a super quick and easy dessert. Use the time when your pastry is in the oven to whip the cream, slice the strawberries and toast the pistachios!
- Let the pastry cool just a little before adding the cream to the tarts so that it doesn't melt!
