As you can see, the recipe calls for:
- Jalapeno: this ingredient is optional (especially if you don't like peppers), however, it adds a fantastic pop of colour to the dip, so I encourage you to use it if you are curious. Slice the jalapeno in halves, use a teaspoon to remove the seeds and chop the rest of it for garnish.
- Corn relish: store bought from a jar is fine. You can get it year round, you don't have to make it yourself. It has taste, tang and a whole lot of texture. You will find it with the pickles, jarred onions and olives at the shops.
- Crispy bacon: this is optional, but provides a nice textural change from the chunky textures in the corn relish. Whilst those textures are wet, we use crispy bacon to add a dry crunchy texture to the dip.
- Cream cheese: a standard block of this is fine. If you want to use the spreadable tub for 2 or 3 of you, you can do that. However, I think the dip looses its presentation with the smaller tubs, so if it is heading towards a crowd, the block is better (and bigger looking but surprisingly the same weight) than the spreadable tub.
- Crackers: your favourite is totally fine for this ingredient and dip pairing. I have used round thick crackers, if you want to use square, salty, thin, water crackers or other that is totally fine!

👩🍳 How to Make Corn Relish Dip
To make the dip, start by removing the cream cheese from the fridge. You need to tear the cardboard layer off, use scissors to cut into the foil, remove and discard that then place it on a serving board.
Grab a spoon and use that to dollop then spread (flip the spoon over) the corn relish into a thick layer over the cream cheese.
Sprinkle the chopped jalapeno pieces over the corn relish, then grab the crispy bacon pieces and sprinkle them over the top.

- A cheese knife is essential to serving or butter knife if you don't have. This is because it is a 'spreadable dip, not a 'dunking dip'.
- If you are having a party and want to serve warm toasted corn chips with the dip, you can add them to the slow cooker and keep warm in there for endless hot chips!
- Additional bowls of the toppings (ie crispy bacon) can be plated with the dip somewhat reminiscent of a nacho cheese station. This way the eaters can spread the dip then fully load their cracker.

Corn Relish Dip
- 1 Serving platter
- 1 Cheese knife
- 250 grams / 8oz cream cheese Note 1
- ¼ cup corn relish Note 2
- 2 tablespoon crispy bacon pieces Note 3
- ½ jalapeno seeds removed, finely diced, Note 4
- crackers to serve
- Cream cheese: remove the cream cheese from the fridge, tear off the cardboard, peel off the foil and place in centre of serving board.
- Relish: use a spoon to dollop the relish onto the cream cheese. Flip the spoon over, then gently pat the relish down so that it is in a thick layer.
- Jalapeno: sprinkle the chopped jalapeno over the corn relish.
- Crispy bacon: sprinkle the crispy bacon over the top of the chopped jalapeno.
- Crackers: place crackers around the edges of the dip and provide a cheese knife for serving
- Note 1 - Cream cheese: go for a block over a tub of this as it looks better if the dip is being presented ie at a party or gathering. Any block within the range of 225 - 250 grams will work fine. It doesn't need long to soften as it will soften as you prepare the dip.
- Note 2 - Corn relish: sweet, easy to get your hands on and available all year round, this ingredient has taste and texture. Leftovers can be used on burgers, hot dogs or roll ups (sandwiches).
- Note 3- Jalapeno: sliced in half, seeds removed and finely chopped is best. This will take the heat out (leave the seeds in if you want a little spice). Use capsicum (bell pepper) as an alternative with the same colour and texture but no spice.
